Define an accepted puree texture and fragment result

Describe skin and fibre texture, grittiness and hard-fragment criteria using representative samples and agreed methods. The two-stage pulper/refiner can develop fruit body after stone control, but visual smoothness alone cannot prove hard-fragment acceptance.

Compare fresh and dried preparation

Fresh and dried fruit may reach different pulper conditions. Record any conditioning water, prior processing and the actual prepared feed before comparing a pulper screen, retained-solids split or product sample. Screen opening is one trial setting, not a universal texture result.

Carry measured puree into transfer and heat selection

Measure viscosity with temperature and method, and describe particles and solids. Select buffer-tank outlet, pump suction, valves, pipe path and tubular heat treatment for that actual puree before matching the filler; a thin-liquid rating is not a thick-puree duty.
